Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  3. Add the egg, vanilla extract, maple syrup, and maple extract (if using) to the butter and sugar mixture. Beat on low speed until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. If adding nuts, fold them in at this stage.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Scoop out portions of the chilled dough and roll them into balls (about 1 inch in diameter). Place on the prepared baking sheets, leaving about 2 inches of space between each cookie.
