  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut cream
  • 1 cup pineapple juice
  • 1 cup white rum (optional)
  • 1 cup ice cubes
  • 1 tablespoon lime juice
  • Fresh mint leaves for garnish
  • Extra mango slices for garnish

Instructions

  1. Peel the ripe mangoes using a sharp knife.
  2. Cut the mangoes into small chunks for easier blending.
  3. Place the diced mangoes into a blender.
  4. Blend on high speed until smooth. If fibrous, strain through a fine mesh sieve for a silky texture.
  5. Set the mango puree aside.
  6. In the same blender, add the mango puree.
  7. Pour in 1 cup of coconut cream.
  8. Add 1 cup of pineapple juice.
  9. If desired, add 1 cup of white rum for an alcoholic version.
  10. Squeeze in 1 tablespoon of fresh lime juice.
  11. Toss in 1 cup of ice cubes.
  12. Blend on high speed until smooth and frothy, about 30 seconds to a minute.
  13. Taste the mixture. If too sweet, add more lime juice.
  14. For a creamier texture, add more coconut cream.
  15. Blend again briefly to mix any adjustments.
  16. Use tall glasses or tiki mugs for serving.
  17. Pour the Mango Colada mixture into each glass, filling them about three-quarters full.
  18. Garnish with a fresh mint leaf and a slice of mango on the rim.
  19. Serve immediately with colorful straws.
