- 2 ripe mangoes, peeled and diced
- 1 cup coconut cream
- 1 cup pineapple juice
- 1 cup white rum (optional)
- 1 cup ice cubes
- 1 tablespoon lime juice
- Fresh mint leaves for garnish
- Extra mango slices for garnish
Instructions
- Peel the ripe mangoes using a sharp knife.
- Cut the mangoes into small chunks for easier blending.
- Place the diced mangoes into a blender.
- Blend on high speed until smooth. If fibrous, strain through a fine mesh sieve for a silky texture.
- Set the mango puree aside.
- In the same blender, add the mango puree.
- Pour in 1 cup of coconut cream.
- Add 1 cup of pineapple juice.
- If desired, add 1 cup of white rum for an alcoholic version.
- Squeeze in 1 tablespoon of fresh lime juice.
- Toss in 1 cup of ice cubes.
- Blend on high speed until smooth and frothy, about 30 seconds to a minute.
- Taste the mixture. If too sweet, add more lime juice.
- For a creamier texture, add more coconut cream.
- Blend again briefly to mix any adjustments.
- Use tall glasses or tiki mugs for serving.
- Pour the Mango Colada mixture into each glass, filling them about three-quarters full.
- Garnish with a fresh mint leaf and a slice of mango on the rim.
- Serve immediately with colorful straws.
