Instructions
- Preheat your oven to 425°F (220°C).
- If whole, separate the wings into drumettes and flats by cutting through the joint. Alternatively, use pre-cut wings.
- Pat the chicken wings dry with paper towels to remove excess moisture.
- In a large mixing bowl, mix olive oil, lemon juice, lemon zest, black pepper, garlic powder, onion powder, salt, paprika, and cayenne pepper (if using).
- Whisk until well combined.
- Add the wings to the marinade and toss until evenly coated. Marinate for at least 30 minutes, or up to overnight in the fridge for enhanced flavor.
- Line a large baking sheet with aluminum foil and place a wire rack on top.
- Place the marinated wings in a single layer on the wire rack, ensuring they do not touch.
- Bake for 40-45 minutes, flipping halfway through for even cooking. They should be golden brown and crispy.
- For extra crispiness, broil for the last 2-3 minutes, watching closely to prevent burning.
- Let the wings rest for a few minutes after baking.
- Chop fresh parsley for garnish.
- Transfer wings to a platter, squeeze fresh lemon juice over them, sprinkle with parsley, and add lemon wedges on the side.
