Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, minced garlic, lemon juice, and lemon zest. Add dried oregano, dried thyme, and red pepper flakes (if using). Season generously with salt and pepper.
  2. Marinate the Chicken: Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Cook the Chicken: Remove chicken from refrigerator 20 minutes before cooking. Heat a large skillet over medium-high heat. Add chicken breasts to the hot skillet, being careful not to overcrowd. Sear for 4-5 minutes per side, until golden brown.
  4. Reduce heat to medium and continue cooking for another 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. If desired, pour in chicken broth or white wine during the last few minutes of cooking to create a sauce. Scrape up any browned bits from the bottom of the pan.
