- 1 cup unsweetened cashew milk (keto-friendly, minimal carbs)
- 1/2 cup strong brewed coffee, cooled (or 2 shots of espresso)
- 1–2 tablespoons erythritol or preferred keto-friendly sweetener (adjust to taste)
- 1 tablespoon heavy cream (optional, for extra creaminess)
- 1/4 teaspoon vanilla extract (optional, for flavor)
- Pinch of sea salt (enhances sweetness)
- Ice cubes
- Optional toppings: unsweetened cocoa powder, cinnamon, keto-friendly whipped cream, sugar-free chocolate syrup
Instructions
- Brew Strong Coffee/Espresso: Brew strong coffee (2 tablespoons ground coffee per 6 ounces water) and let cool completely, or pull two shots of espresso and let cool slightly.
- Dissolve Sweetener: In a small bowl, combine cooled coffee/espresso with erythritol (or chosen sweetener). Stir until completely dissolved. Add vanilla extract (if using) and a pinch of salt.
- Assemble Iced Coffee: Fill a tall glass with ice cubes. Pour in unsweetened cashew milk. Gently pour the sweetened coffee mixture over the cashew milk and ice.
- Add Cream (Optional): Drizzle a tablespoon of heavy cream over the top (if using).
- Stir and Enjoy: Stir well to combine. Add optional toppings as desired.
Notes
- Coffee Strength: The key is a strong coffee base. Adjust coffee-to-water ratio for brewed coffee.
- Sweetener: Adjust sweetener to your liking. Erythritol, stevia, or monk fruit are good keto options.
- Salt: Don’t skip the pinch of salt! It enhances the sweetness.
- Cashew Milk: Ensure cashew milk is unsweetened and keto-friendly.
- Toppings: Get creative with toppings like cocoa powder, cinnamon, keto whipped cream, or sugar-free syrup.
- Troubleshooting:
- Too Bitter: Add more sweetener or cream.
- Too Watery: Use less ice or stronger coffee.
- Sweetener Won’t Dissolve: Warm the coffee slightly.
