Enjoy a traditional Irish breakfast featuring savory sausages, crispy bacon, black and white pudding, eggs, and baked beans. This hearty meal is perfect for brunch or special occasions, providing a delicious and satisfying start to your day.

Ingredients

Scale
  • 4 sausages (preferably Irish pork sausages)
  • 4 slices of bacon (back bacon is traditional)
  • 4 eggs (free-range if possible)
  • 1 cup of black pudding (sliced)
  • 1 cup of white pudding (sliced)
  • 2 tomatoes (halved)
  • 1 cup of baked beans
  • 4 slices of soda bread (or brown bread)
  • Butter (for frying and spreading)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Gather all your ingredients: Lay everything out on the counter for easy access.
  2. Slice the black and white pudding: Cut into thick slices (about half an inch thick).
  3. Prepare the tomatoes: Halve the tomatoes and set aside.
  4. Get the bread ready: Slice soda or brown bread into thick pieces.
  5. Heat the pan: Add a little butter to a large frying pan over medium heat.
  6. Cook the sausages: Add sausages to the pan and cook for 10-12 minutes, turning occasionally until golden brown and cooked through.
  7. Add the bacon: After 5 minutes, add bacon to the pan and cook for 5-7 minutes until crispy.
  8. Fry the black and white pudding: Push sausages and bacon to one side and add pudding slices. Fry for 3-4 minutes on each side until crispy.
  9. Cook the eggs: In a separate pan, add butter and cook eggs to your liking (sunny side up, over easy, or scrambled).
  10. Prepare the tomatoes: In the same pan as the eggs, add halved tomatoes, cut side down, and cook for 2-3 minutes until softened.
  11. Heat the baked beans: Warm baked beans in a small saucepan over low heat.
  12. Toast the bread: Toast the bread in a toaster or on a griddle with butter until golden brown.
  13. Plate the ingredients: Start with sausages and bacon on one side of the plate.
  14. Add the puddings: Place black and white pudding next to the sausages and bacon.
  15. Include the eggs: Gently place cooked eggs on the plate.
  16. Add the tomatoes: Place cooked tomatoes next to the eggs.
  17. Spoon on the baked beans: Add a generous spoonful of baked beans to the plate.
  18. Finish with the bread: Add slices of soda or brown bread to the plate.
  19. Garnish: Sprinkle fresh parsley over the top if desired.
