- In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the finely chopped onion. Sauté the onion for about 3-4 minutes, or until it becomes translucent and fragrant.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
- Next, add the ground beef (or turkey) to the skillet. Use a spatula to break it up into smaller pieces. Cook until the meat is browned and no longer pink, about 5-7 minutes. Drain any excess fat if using beef.
- Once the meat is browned, stir in the Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Mix well to ensure the meat is evenly coated with the spices.
- Pour in the beef broth and milk, stirring to combine all the ingredients. Bring the mixture to a gentle simmer.
- Once the mixture is simmering, add the uncooked egg noodles directly into the skillet. Stir them in so they are submerged in the liquid.
- Cover the skillet with a lid and let it cook for about 10-12 minutes, stirring occasionally. If the mixture seems too thick, you can add a little more beef broth or milk to reach your desired consistency.
- After the noodles are cooked, remove the skillet from the heat. Stir in the sour cream until it is fully incorporated.
- Taste and adjust the seasoning if necessary, adding more salt or pepper as desired.
- To serve, spoon the stroganoff onto plates or into bowls. Garnish with freshly chopped parsley.
