  • 4 ounces chorizo sausage, sliced (preferably lean)
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Cooked quinoa or brown rice, for serving

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. Cut the chorizo sausage into thin rounds or small cubes.
  3. Peel and finely mince the garlic cloves.
  4. Rinse and chop the parsley finely.
  5. Cut the lemon in half and juice it, ensuring no seeds fall in.
  6. In a large skillet, heat the olive oil over medium heat until shimmering.
  7. Add the sliced chorizo to the pan and cook for 3-4 minutes until browned and crispy.
  8. Stir in the minced garlic and cook for about 1 minute until fragrant.
