- 1 pound large shrimp, peeled and deveined
- 4 ounces chorizo sausage, sliced (preferably lean)
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Cooked quinoa or brown rice, for serving
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- Cut the chorizo sausage into thin rounds or small cubes.
- Peel and finely mince the garlic cloves.
- Rinse and chop the parsley finely.
- Cut the lemon in half and juice it, ensuring no seeds fall in.
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the sliced chorizo to the pan and cook for 3-4 minutes until browned and crispy.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- In a bowl, season the shrimp with smoked paprika, red pepper flakes, salt, and pepper.
- Add the seasoned shrimp to the skillet and cook for 3-4 minutes until pink and opaque.
- Squeeze fresh lemon juice over the mixture and stir to combine.
- Cook quinoa or brown rice according to package instructions.
- Spoon a portion of quinoa or rice onto each plate.
- Use a slotted spoon to scoop the shrimp and chorizo mixture on top of the quinoa or rice.
- Sprinkle chopped parsley over the top for color and freshness.
- Enjoy hot, with extra lemon wedges on the side if desired.
