- 1 pound ground chicken
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- 1 cup marinara sauce (for serving)
Instructions
- In a large mixing bowl, combine the ground chicken, whole wheat breadcrumbs, and grated Parmesan cheese. Use a fork to break up the chicken and mix everything evenly.
- Add the chopped parsley, finely chopped onion, and minced garlic to the bowl.
- Crack the egg into the mixture to act as a binder.
- Sprinkle in the dried oregano, salt, black pepper, and red pepper flakes (if using). Mix everything together until just combined, being careful not to overmix.
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Take about 2 tablespoons of the mixture and roll it into a ball, aiming for about 1 to 1.5 inches in diameter. Place the meatball on the prepared baking sheet.
- Repeat until all the mixture is shaped into meatballs, yielding about 20-24 meatballs.
- Drizzle the olive oil over the meatballs.
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C). Turn them halfway through baking for even browning.
- Once done, remove the meatballs from the oven and let them cool for a few minutes on the baking sheet.
