  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1/2 cup sour cream or Greek yogurt (optional)
  • 1/2 cup salsa (optional)

Instructions

  1. Place the chicken breasts in a large bowl.
  2. Drizzle olive oil over the chicken.
  3. In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
  4. Sprinkle the spice mixture over the chicken, coating evenly. Rub the spices into the chicken.
  5. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes (2-4 hours for enhanced flavor).
  6. Preheat your grill to medium-high heat.
  7. Remove the chicken from the marinade, letting excess drip off. Discard the leftover marinade.
  8. Place the chicken on the grill diagonally for grill marks.
  9. Grill for 6-7 minutes on one side without moving.
  10. Flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  11. Remove from the grill and let rest for 5 minutes.
  12. Shred the lettuce and place it in a bowl.
  13. Dice the tomatoes and add to another bowl.
  14. Chop the red onion finely and set aside.
  15. Slice the avocado and set aside.
  16. Chop the fresh cilantro.
  17. Cut the lime into wedges.
  18. Warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side.
  19. Place a few slices of grilled chicken in the center of each tortilla.
  20. Top with shredded lettuce, diced tomatoes, and red onion.
  21. Add avocado slices on top.
  22. Sprinkle with chopped cilantro.
  23. Optionally, add a dollop of sour cream or Greek yogurt and salsa.
