- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1 avocado, sliced
- 1/2 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1/2 cup sour cream or Greek yogurt (optional)
- 1/2 cup salsa (optional)
Instructions
- Place the chicken breasts in a large bowl.
- Drizzle olive oil over the chicken.
- In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
- Sprinkle the spice mixture over the chicken, coating evenly. Rub the spices into the chicken.
- Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes (2-4 hours for enhanced flavor).
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, letting excess drip off. Discard the leftover marinade.
- Place the chicken on the grill diagonally for grill marks.
- Grill for 6-7 minutes on one side without moving.
- Flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes.
- Shred the lettuce and place it in a bowl.
- Dice the tomatoes and add to another bowl.
- Chop the red onion finely and set aside.
- Slice the avocado and set aside.
- Chop the fresh cilantro.
- Cut the lime into wedges.
- Warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side.
- Place a few slices of grilled chicken in the center of each tortilla.
- Top with shredded lettuce, diced tomatoes, and red onion.
- Add avocado slices on top.
- Sprinkle with chopped cilantro.
- Optionally, add a dollop of sour cream or Greek yogurt and salsa.
