  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt (adjust to taste)
  • 2 green onions, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Wash the chicken under cold water and pat it dry with paper towels.
  2. Cut the chicken into bite-sized pieces (about 1-inch cubes).
  3. In a large mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, cornstarch, sugar, sesame oil, and salt. Mix well until the chicken is evenly coated.
  4. Let the chicken marinate for at least 30 minutes (1-2 hours for enhanced flavor).
  5. In a small bowl, combine minced garlic and freshly ground black pepper. Set aside.
  6. Heat a large skillet or wok over medium-high heat and add vegetable oil.
  7. Add the marinated chicken pieces to the skillet in a single layer, avoiding overcrowding.
  8. Cook undisturbed for about 4-5 minutes until golden brown.
  9. Stir the chicken and cook for an additional 3-4 minutes until cooked through (internal temperature should reach 165°F/75°C).
  10. Push the chicken to one side of the skillet and add the garlic and black pepper mixture to the empty space. Sauté for about 30 seconds until fragrant.
  11. Mix the garlic and black pepper into the chicken and cook for another minute.
  12. Taste the chicken and adjust seasoning if necessary. Add more black pepper or chili flakes for spice if desired.
  13. Remove from heat and transfer to a serving platter.
