- 1 lb (450g) boneless, skinless chicken thighs or breasts
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon freshly ground black pepper
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon salt (adjust to taste)
- 2 green onions, chopped (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Wash the chicken under cold water and pat it dry with paper towels.
- Cut the chicken into bite-sized pieces (about 1-inch cubes).
- In a large mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, cornstarch, sugar, sesame oil, and salt. Mix well until the chicken is evenly coated.
- Let the chicken marinate for at least 30 minutes (1-2 hours for enhanced flavor).
- In a small bowl, combine minced garlic and freshly ground black pepper. Set aside.
- Heat a large skillet or wok over medium-high heat and add vegetable oil.
- Add the marinated chicken pieces to the skillet in a single layer, avoiding overcrowding.
- Cook undisturbed for about 4-5 minutes until golden brown.
- Stir the chicken and cook for an additional 3-4 minutes until cooked through (internal temperature should reach 165°F/75°C).
- Push the chicken to one side of the skillet and add the garlic and black pepper mixture to the empty space. Sauté for about 30 seconds until fragrant.
- Mix the garlic and black pepper into the chicken and cook for another minute.
- Taste the chicken and adjust seasoning if necessary. Add more black pepper or chili flakes for spice if desired.
- Remove from heat and transfer to a serving platter.
- Garnish with chopped green onions and serve hot over cooked rice or noodles.
