These French Onion Sausage Rolls combine savory caramelized onions and seasoned sausage meat wrapped in flaky puff pastry, making them a perfect snack for any occasion. Ideal for parties or cozy nights in, they are sure to impress with their delicious flavor and appealing presentation.

- 1 pound (450g) of sausage meat (pork, chicken, or a mix)
- 2 large onions, finely sliced
- 2 tablespoons of olive oil
- 1 tablespoon of unsalted butter
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of Dijon mustard
- 1 sheet of puff pastry (thawed if frozen)
- 1 egg, beaten (for egg wash)
- Flour, for dusting
Instructions
- Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the finely sliced onions.
- Sprinkle the sugar and salt over the onions to help caramelize them.
- Cook the onions, stirring occasionally, for about 15-20 minutes until soft and golden brown. Add a splash of water if they start to stick.
- Once caramelized, add black pepper, dried thyme, and balsamic vinegar. Stir well and cook for another 2-3 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the sausage meat with Dijon mustard.
- Add the cooled onion mixture to the sausage meat and mix until well combined. Adjust seasoning if necessary.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out the puff pastry to about 1/8 inch thick.
- Cut the pastry into rectangles, about 4 inches wide and 6 inches long.
- Place a generous amount of the sausage and onion mixture along one edge of each pastry rectangle, leaving about an inch of space at the edges.
- Fold the pastry over the filling to create a roll and seal the edges well.
- Place the rolls seam-side down on the prepared baking sheet and brush the tops with the beaten egg.
- Bake in the preheated oven for about 25-30 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Feel free to experiment with different types of sausage meat for varied flavors.
- These rolls can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
