Ingredients

  • 1 pound (450g) of sausage meat (pork, chicken, or a mix)
  • 2 large onions, finely sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of unsalted butter
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of Dijon mustard
  • 1 sheet of puff pastry (thawed if frozen)
  • 1 egg, beaten (for egg wash)
  • Flour, for dusting

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the finely sliced onions.
  2. Sprinkle the sugar and salt over the onions to help caramelize them.
  3. Cook the onions, stirring occasionally, for about 15-20 minutes until soft and golden brown. Add a splash of water if they start to stick.
  4. Once caramelized, add black pepper, dried thyme, and balsamic vinegar. Stir well and cook for another 2-3 minutes. Remove from heat and let cool slightly.
  5. In a large mixing bowl, combine the sausage meat with Dijon mustard.
  6. Add the cooled onion mixture to the sausage meat and mix until well combined. Adjust seasoning if necessary.
  7. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  8. On a floured surface, roll out the puff pastry to about 1/8 inch thick.
  9. Cut the pastry into rectangles, about 4 inches wide and 6 inches long.
  10. Place a generous amount of the sausage and onion mixture along one edge of each pastry rectangle, leaving about an inch of space at the edges.
  11. Fold the pastry over the filling to create a roll and seal the edges well.
  12. Place the rolls seam-side down on the prepared baking sheet and brush the tops with the beaten egg.
  13. Bake in the preheated oven for about 25-30 minutes, or until the pastry is puffed and golden brown.
  14. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Feel free to experiment with different types of sausage meat for varied flavors.
  • These rolls can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
