Savor the deliciousness of this French Onion Chicken Casserole, featuring juicy chicken breasts in a creamy onion sauce, topped with melted Gruyère cheese and crispy bread crumbs. It’s a comforting dish perfect for family meals or gatherings!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1 cup French bread crumbs
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, black pepper, garlic powder, and dried thyme, rubbing the seasonings into the meat.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken breasts for 5-7 minutes on each side until golden brown. Remove and cover with foil to keep warm.
  4. In the same skillet, add the remaining tablespoon of olive oil and the sliced onions. Cook, stirring occasionally, for 15-20 minutes until caramelized and golden brown.
  5. Pour in the beef broth, scraping the bottom of the skillet to deglaze. Simmer for 5 minutes.
  6. Stir in the heavy cream and cook for an additional 2-3 minutes until the sauce thickens slightly. Remove from heat.
  7. In a large casserole dish, place the seared chicken breasts in a single layer.
  8. Pour the caramelized onion and cream mixture over the chicken, ensuring each piece is well-coated.
  9. Sprinkle the shredded Gruyère cheese evenly over the top.
  10. Add the French bread crumbs on top of the cheese. Optionally, mix melted butter into the bread crumbs for extra flavor.
  11. Cover the casserole with aluminum foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the chicken reaches an internal temperature of 165°F (74°C).
  13. Let the casserole sit for 5-10 minutes before serving.
  14. Serve portions with a large spoon, ensuring to include chicken, sauce, and topping in each serving.
  15. Garnish with freshly chopped parsley and enjoy with a green salad or steamed vegetables.

Notes

  • For added flavor, consider mixing a bit of melted butter into the bread crumbs before sprinkling them on top.
