Ingredients

  • 7g (1 packet) active dry yeast
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 300ml (1 1/4 cups) lukewarm water
  • 50ml (1/4 cup) olive oil, plus extra for greasing
  • 200g (7 ounces) feta cheese, crumbled
  • 1 large egg, lightly beaten
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • Pinch of black pepper
  • 1/4 cup honey
  • 12 teaspoons chili flakes (adjust to your spice preference)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 large egg, lightly beaten
  • 1 tablespoon milk or water
  • Sesame seeds
  • Everything bagel seasoning

Instructions

  1. Activate the Yeast: In a large bowl, combine the lukewarm water, sugar, and yeast. Let it sit for 5-10 minutes, or until the mixture becomes foamy.
  2. Combine Dry Ingredients: In a separate large bowl, whisk together the flour and salt.
  3. Combine Wet and Dry Ingredients: Pour the yeast mixture and olive oil into the bowl with the flour. Mix until a shaggy dough forms.
  4. Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, or until the dough is smooth and elastic. Add flour or water as needed to achieve the right consistency.
  5. First Rise: Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat it with the oil. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Prepare the Feta Filling: While the dough is rising, combine the crumbled feta cheese, beaten egg, chopped dill, chopped parsley, and black pepper in a medium bowl. Mix well.
  7. Punch Down the Dough: Once the dough has doubled, gently punch it down.
  8. Divide the Dough: Turn the dough out onto a lightly floured surface. Divide the dough into 12 equal pieces.
  9. Roll Out Each Piece: Roll each piece of dough into a small oval or circle, about 6-8 inches in diameter.
  10. Fill the Dough: Place a generous spoonful (about 2 tablespoons) of the feta filling in the center of each dough circle.
  11. Shape the Rolls: Fold the dough over the filling and seal. Shape into classic rolls, twisted rolls, or envelope rolls.
  12. Second Rise: Place the shaped rolls on a baking sheet lined with parchment paper, leaving some space between each roll. Cover and let the rolls rise for another 20-30 minutes.
  13. Prepare the Chili Honey Glaze: While the rolls are undergoing their second rise, combine the honey, chili flakes, olive oil, and lemon juice in a small saucepan. Heat over low heat, stirring constantly, until the honey is melted and the chili flakes have infused the honey with their flavor. Let it cool slightly.
  14. Preheat the Oven: Preheat your oven to 375°F (190°C).
  15. Prepare the Egg Wash: In a small bowl, whisk together the egg and milk (or water) to create the egg wash.
  16. Brush with Egg Wash: Gently brush the tops of the risen rolls with the egg wash.
  17. Add Toppings (Optional): If desired, sprinkle the rolls with sesame seeds or everything bagel seasoning.
  18. Bake the Rolls: Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
  19. Glaze the Rolls: Remove the rolls from the oven and immediately brush them generously with the chili honey glaze.
  20. Cool Slightly: Let the rolls cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  21. Serve: Serve warm or at room temperature.

Notes

  • Make sure your yeast is active. If the yeast mixture doesn’t foam, start again with fresh yeast.
  • Adjust the amount of chili flakes in the glaze to your spice preference.
  • Some feta cheeses are saltier than others, so adjust the seasoning of the filling accordingly.
  • You can use different shaping methods for the rolls.
  • The internal temperature of the rolls should reach around 200°F (93°C) when cooked through.
