Savory feta-filled rolls drizzled with a sweet and spicy chili honey glaze. A delicious and flavorful treat perfect for any occasion.

- 500g (about 4 cups) all-purpose flour, plus extra for dusting
- 7g (1 packet) active dry yeast
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 300ml (1 1/4 cups) lukewarm water
- 50ml (1/4 cup) olive oil, plus extra for greasing
- 200g (7 ounces) feta cheese, crumbled
- 1 large egg, lightly beaten
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- Pinch of black pepper
- 1/4 cup honey
- 1–2 teaspoons chili flakes (adjust to your spice preference)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 large egg, lightly beaten
- 1 tablespoon milk or water
- Sesame seeds
- Everything bagel seasoning
Instructions
- Activate the Yeast: In a large bowl, combine the lukewarm water, sugar, and yeast. Let it sit for 5-10 minutes, or until the mixture becomes foamy.
- Combine Dry Ingredients: In a separate large bowl, whisk together the flour and salt.
- Combine Wet and Dry Ingredients: Pour the yeast mixture and olive oil into the bowl with the flour. Mix until a shaggy dough forms.
- Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, or until the dough is smooth and elastic. Add flour or water as needed to achieve the right consistency.
- First Rise: Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat it with the oil. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Prepare the Feta Filling: While the dough is rising, combine the crumbled feta cheese, beaten egg, chopped dill, chopped parsley, and black pepper in a medium bowl. Mix well.
- Punch Down the Dough: Once the dough has doubled, gently punch it down.
- Divide the Dough: Turn the dough out onto a lightly floured surface. Divide the dough into 12 equal pieces.
- Roll Out Each Piece: Roll each piece of dough into a small oval or circle, about 6-8 inches in diameter.
- Fill the Dough: Place a generous spoonful (about 2 tablespoons) of the feta filling in the center of each dough circle.
- Shape the Rolls: Fold the dough over the filling and seal. Shape into classic rolls, twisted rolls, or envelope rolls.
- Second Rise: Place the shaped rolls on a baking sheet lined with parchment paper, leaving some space between each roll. Cover and let the rolls rise for another 20-30 minutes.
- Prepare the Chili Honey Glaze: While the rolls are undergoing their second rise, combine the honey, chili flakes, olive oil, and lemon juice in a small saucepan. Heat over low heat, stirring constantly, until the honey is melted and the chili flakes have infused the honey with their flavor. Let it cool slightly.
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Egg Wash: In a small bowl, whisk together the egg and milk (or water) to create the egg wash.
- Brush with Egg Wash: Gently brush the tops of the risen rolls with the egg wash.
- Add Toppings (Optional): If desired, sprinkle the rolls with sesame seeds or everything bagel seasoning.
- Bake the Rolls: Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
- Glaze the Rolls: Remove the rolls from the oven and immediately brush them generously with the chili honey glaze.
- Cool Slightly: Let the rolls cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve: Serve warm or at room temperature.
Notes
- Make sure your yeast is active. If the yeast mixture doesn’t foam, start again with fresh yeast.
- Adjust the amount of chili flakes in the glaze to your spice preference.
- Some feta cheeses are saltier than others, so adjust the seasoning of the filling accordingly.
- You can use different shaping methods for the rolls.
- The internal temperature of the rolls should reach around 200°F (93°C) when cooked through.
