- 1 cup granulated sugar

- 2 cups mixed berries (strawberries, raspberries, blueberries)
- Fresh mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 225°F (110°C).
- In a clean, dry mixing bowl, add the egg whites.
- Beat the egg whites on medium speed until frothy (1-2 minutes).
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat.
- Increase the speed to high and beat until stiff peaks form.
- Add the vanilla extract and mix gently.
- Line a baking sheet with parchment paper and dollop or pipe the meringue onto it in small rounds.
- Bake for 1.5 to 2 hours until dry to the touch. Turn off the oven and let cool inside with the door slightly ajar.
- In a large mixing bowl, pour in the heavy whipping cream.
- Add the powdered sugar and vanilla extract.
- Beat on medium speed until soft peaks form (3-5 minutes). Do not overwhip.
- Chill the whipped cream in the refrigerator.
- Rinse the mixed berries under cold water. Hull and slice strawberries if using.
- Toss the berries in a medium bowl and let sit for 10-15 minutes to macerate.
- Once the meringues are cool, break them into bite-sized pieces.
- In a serving bowl or individual glasses, layer the broken meringue pieces.
- Add a dollop of whipped cream over the meringue.
- Layer the mixed berries on top.
- Repeat the layering process, finishing with whipped cream and berries on top.
- Garnish with fresh mint leaves if desired.
- Serve immediately for the best texture.
- Store meringues in an airtight container for up to a week.

- For added sweetness, sprinkle a little sugar over the berries if they are tart.
