  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for the cream)
  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 225°F (110°C).
  2. In a clean, dry mixing bowl, add the egg whites.
  3. Beat the egg whites on medium speed until frothy (1-2 minutes).
  4. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat.
  5. Increase the speed to high and beat until stiff peaks form.
  6. Add the vanilla extract and mix gently.
  7. Line a baking sheet with parchment paper and dollop or pipe the meringue onto it in small rounds.
  8. Bake for 1.5 to 2 hours until dry to the touch. Turn off the oven and let cool inside with the door slightly ajar.
  9. In a large mixing bowl, pour in the heavy whipping cream.
  10. Add the powdered sugar and vanilla extract.
  11. Beat on medium speed until soft peaks form (3-5 minutes). Do not overwhip.
  12. Chill the whipped cream in the refrigerator.
  13. Rinse the mixed berries under cold water. Hull and slice strawberries if using.
  14. Toss the berries in a medium bowl and let sit for 10-15 minutes to macerate.
  15. Once the meringues are cool, break them into bite-sized pieces.
  16. In a serving bowl or individual glasses, layer the broken meringue pieces.
  17. Add a dollop of whipped cream over the meringue.
  18. Layer the mixed berries on top.
  19. Repeat the layering process, finishing with whipped cream and berries on top.
  20. Garnish with fresh mint leaves if desired.
  21. Serve immediately for the best texture.
  22. Store meringues in an airtight container for up to a week.

  • For added sweetness, sprinkle a little sugar over the berries if they are tart.
