Description
These vibrant spring rolls are filled with shrimp (or tofu), vermicelli noodles, and fresh vegetables and herbs, all wrapped in rice paper. They make a light meal or appetizer and are served with a flavorful dipping sauce for an extra kick!

- 1 package of rice paper wrappers (about 8–10 wrappers)
- 1 cup of cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian option)
- 1 cup of vermicelli noodles, cooked according to package instructions
- 1 cup of fresh lettuce leaves, torn into pieces
- 1 cup of fresh mint leaves
- 1 cup of fresh cilantro leaves
- 1 cup of shredded carrots
- 1 cucumber, julienned
- 1 avocado, sliced (optional)
- 1/4 cup of soy sauce (for dipping)
- 1 tablespoon of rice vinegar (for dipping)
- 1 tablespoon of sesame oil (for dipping)
- Chili sauce (optional, for extra heat)
Instructions
- Boil water in a pot, add the vermicelli noodles, and cook according to package instructions (about 3-5 minutes). Drain and rinse under cold water. Set aside.
- If using shrimp, ensure they are cooked and sliced in half lengthwise. For tofu, press to remove moisture, cut into strips, and pan-fry until golden. Set aside.
- Wash and prepare vegetables: tear lettuce, julienne cucumber, and shred carrots. Slice avocado if using.
- Rinse mint and cilantro leaves, pat dry.
- Fill a shallow dish with warm water. Dip one rice paper wrapper for 10-15 seconds until soft. Lay it flat on a damp towel or cutting board.
- Place about 2 tablespoons of vermicelli noodles in the center of the wrapper. Layer with shrimp or tofu, lettuce, mint, cilantro, carrots, cucumber, and avocado.
- Fold the bottom of the wrapper over the filling, tuck in the sides, and roll tightly until sealed. Repeat with remaining wrappers and fillings.
- Heat 1 inch of vegetable oil in a frying pan over medium heat. Fry spring rolls until golden brown, about 2-3 minutes. Transfer to a paper towel-lined plate.
- In a small bowl, combine soy sauce, rice vinegar, and sesame oil. Add chili sauce for heat if desired.
- Arrange spring rolls on a platter with the dipping sauce on the side. Garnish with extra herbs or sesame seeds if desired.

- For a gluten-free option, ensure the soy sauce is gluten-free.
