  • Author: Dottie
  • Total Time: 40 minutes
  • Yield: 8-10 spring rolls 1x

Description

These vibrant spring rolls are filled with shrimp (or tofu), vermicelli noodles, and fresh vegetables and herbs, all wrapped in rice paper. They make a light meal or appetizer and are served with a flavorful dipping sauce for an extra kick!

Ingredients

Scale
  • 1 package of rice paper wrappers (about 810 wrappers)
  • 1 cup of cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian option)
  • 1 cup of vermicelli noodles, cooked according to package instructions
  • 1 cup of fresh lettuce leaves, torn into pieces
  • 1 cup of fresh mint leaves
  • 1 cup of fresh cilantro leaves
  • 1 cup of shredded carrots
  • 1 cucumber, julienned
  • 1 avocado, sliced (optional)
  • 1/4 cup of soy sauce (for dipping)
  • 1 tablespoon of rice vinegar (for dipping)
  • 1 tablespoon of sesame oil (for dipping)
  • Chili sauce (optional, for extra heat)

Instructions

  1. Boil water in a pot, add the vermicelli noodles, and cook according to package instructions (about 3-5 minutes). Drain and rinse under cold water. Set aside.
  2. If using shrimp, ensure they are cooked and sliced in half lengthwise. For tofu, press to remove moisture, cut into strips, and pan-fry until golden. Set aside.
  3. Wash and prepare vegetables: tear lettuce, julienne cucumber, and shred carrots. Slice avocado if using.
  4. Rinse mint and cilantro leaves, pat dry.
  5. Fill a shallow dish with warm water. Dip one rice paper wrapper for 10-15 seconds until soft. Lay it flat on a damp towel or cutting board.
  6. Place about 2 tablespoons of vermicelli noodles in the center of the wrapper. Layer with shrimp or tofu, lettuce, mint, cilantro, carrots, cucumber, and avocado.
  7. Fold the bottom of the wrapper over the filling, tuck in the sides, and roll tightly until sealed. Repeat with remaining wrappers and fillings.
  8. Heat 1 inch of vegetable oil in a frying pan over medium heat. Fry spring rolls until golden brown, about 2-3 minutes. Transfer to a paper towel-lined plate.
  9. In a small bowl, combine soy sauce, rice vinegar, and sesame oil. Add chili sauce for heat if desired.
  10. Arrange spring rolls on a platter with the dipping sauce on the side. Garnish with extra herbs or sesame seeds if desired.

Notes

  • Keep all ingredients fresh and prepared just before assembling to maintain crispness.
  • For a gluten-free option, ensure the soy sauce is gluten-free.
  • Customize fillings based on your preferences or seasonal ingredients.
