- 1 lemon, zested and juiced (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the Yukon Gold potatoes thoroughly under cold running water. You can peel them if desired, but leaving the skin on adds texture and flavor.
- Cut the potatoes into even-sized chunks, about 1 to 2 inches.
- Place the cut potatoes in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch.
- After soaking, drain the potatoes and pat them dry with a clean kitchen towel.
- In a large roasting pan or heavy-duty baking sheet, add the duck fat. If solid, melt it in the oven for a few minutes before adding the potatoes.
- Once melted, swirl the fat around to coat the bottom of the pan evenly.
- In a large mixing bowl, combine the rosemary, thyme, sea salt, black pepper, and minced garlic (if using).
- Add the dried potatoes to the bowl and toss gently to coat them evenly with the herb mixture.
- For added flavor, mix in the lemon zest and juice, tossing again.
- Carefully transfer the seasoned potatoes into the hot roasting pan with the melted duck fat, spreading them out in a single layer.
- Roast for 30 minutes without stirring to form a crispy crust.
- After 30 minutes, flip the potatoes with a spatula and return to the oven.
- Continue roasting for an additional 20-30 minutes, or until golden brown and crispy. Total roasting time should be around 50-60 minutes.
- Check for doneness by piercing a potato with a fork; it should be tender inside and crispy outside.
- Once roasted, let the potatoes cool for a few minutes.
- Transfer to a serving dish and sprinkle with extra sea salt and fresh herbs if desired.
- Serve hot as a side dish to your favorite main course.
