Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly under cold running water. You can peel them if desired, but leaving the skin on adds texture and flavor.
  3. Cut the potatoes into even-sized chunks, about 1 to 2 inches.
  4. Place the cut potatoes in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch.
