  • Total Time: 10 minutes
  • Yield: 1 serving 1x

Description

A refreshing and healthy Cucumber Strawberry Smoothie perfect for breakfast, a snack, or dessert. Packed with vitamins, antioxidants, and probiotics, this customizable smoothie is easy and delicious!

Ingredients

Scale
  • 1 cup fresh strawberries, hulled
  • 1/2 cup cucumber, peeled and roughly chopped
  • 1/2 cup plain Greek yogurt (or vegan alternative)
  • 1/2 cup milk (dairy or non-dairy, such as almond, soy, or oat milk)
  • 1/4 cup water (adjust to desired consistency)
  • 1 tablespoon honey or maple syrup (adjust to taste, or use stevia for a sugar-free option)
  • 1 teaspoon lime juice (freshly squeezed)
  • 1/4 teaspoon fresh ginger, grated (optional, but adds a nice zing!)
  • Pinch of salt (enhances the sweetness)
  • Ice cubes (optional, for a colder smoothie)
  • Optional garnishes: strawberry slices, cucumber ribbons, mint leaves

Instructions

  1. Prepare Ingredients: Wash and hull the strawberries. Peel and roughly chop the cucumber. Measure out the yogurt, milk, sweetener, lime juice, and ginger (if using).
  2. Combine in Blender: Add strawberries, cucumber, Greek yogurt, milk, water, honey (or maple syrup), lime juice, ginger (if using), and a pinch of salt to your blender.
  3. Add Ice (Optional): Add a handful of ice cubes for a colder smoothie.
  4. Blend: Secure the lid and blend on low, gradually increasing speed until smooth and creamy (30-60 seconds). Add more water if too thick, or more strawberries/yogurt if too thin.
  5. Taste and Adjust: Taste and adjust sweetness or tartness as needed with more honey/maple syrup or lime juice.
  6. Serve: Pour into a glass and garnish with strawberry slices, cucumber ribbons, or mint leaves (optional). Serve immediately.

Notes

  • Variations: Add spinach/kale, protein powder, chia/flax/hemp seeds, cayenne pepper, or frozen fruit. Experiment with basil or mint. Use dates or bananas for natural sweetness.
  • Vegan: Use vegan yogurt and plant-based milk.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 24 hours. Stir before serving. Freeze in ice cube trays for later use.
  • Tips: If you don’t have fresh strawberries on hand, you can use frozen strawberries. This will also make the smoothie extra cold and thick.
