- 1/2 cup cucumber, peeled and roughly chopped

- 1/4 cup water (adjust to desired consistency)
- 1 tablespoon honey or maple syrup (adjust to taste, or use stevia for a sugar-free option)
- 1 teaspoon lime juice (freshly squeezed)
- 1/4 teaspoon fresh ginger, grated (optional, but adds a nice zing!)
- Pinch of salt (enhances the sweetness)
- Ice cubes (optional, for a colder smoothie)
- Optional garnishes: strawberry slices, cucumber ribbons, mint leaves
Instructions
- Prepare Ingredients: Wash and hull the strawberries. Peel and roughly chop the cucumber. Measure out the yogurt, milk, sweetener, lime juice, and ginger (if using).
- Combine in Blender: Add strawberries, cucumber, Greek yogurt, milk, water, honey (or maple syrup), lime juice, ginger (if using), and a pinch of salt to your blender.
- Add Ice (Optional): Add a handful of ice cubes for a colder smoothie.
- Blend: Secure the lid and blend on low, gradually increasing speed until smooth and creamy (30-60 seconds). Add more water if too thick, or more strawberries/yogurt if too thin.
- Taste and Adjust: Taste and adjust sweetness or tartness as needed with more honey/maple syrup or lime juice.
- Serve: Pour into a glass and garnish with strawberry slices, cucumber ribbons, or mint leaves (optional). Serve immediately.
Notes
- Variations: Add spinach/kale, protein powder, chia/flax/hemp seeds, cayenne pepper, or frozen fruit. Experiment with basil or mint. Use dates or bananas for natural sweetness.
- Vegan: Use vegan yogurt and plant-based milk.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 24 hours. Stir before serving. Freeze in ice cube trays for later use.
- Tips: If you don’t have fresh strawberries on hand, you can use frozen strawberries. This will also make the smoothie extra cold and thick.
