- 4 large croissants
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon or sausage
- 1/2 cup fresh spinach leaves
- 1/4 cup milk
- Salt and pepper to taste
- Butter for greasing the pan
- Optional: hot sauce or your favorite condiment
Instructions
- Preheat your oven to 350°F (175°C).
- Slice the croissants in half horizontally and place them on a baking sheet lined with parchment paper.
- In a skillet over medium heat, cook bacon until crispy or crumble and brown the sausage. Remove from heat and set aside.
- Rinse the spinach leaves under cold water and pat dry.
- In a bowl, crack the eggs, add milk, and season with salt and pepper. Whisk until combined and slightly frothy.
- In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and let sit for a few seconds before stirring. Cook until just set, about 3-4 minutes, then remove from heat.
- On the bottom half of each croissant, place a generous amount of scrambled eggs.
- Sprinkle about 1/4 cup of shredded cheddar cheese over the eggs.
- Layer the cooked bacon or sausage evenly among the croissants.
- Place a few fresh spinach leaves on top of the meat.
- Place the top half of the croissant over the fillings and gently press down.
- Place the assembled sandwiches back on the baking sheet and bake for 10-12 minutes, until golden brown and cheese is melted.
- Ensure they dont over-brown; they should be crispy on the outside and warm inside.
- Let the sandwiches cool for a minute before serving.
- Drizzle with hot sauce or your favorite condiment if desired.
- Serve warm, either on a plate or wrapped in parchment paper.
