  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon or sausage
  • 1/2 cup fresh spinach leaves
  • 1/4 cup milk
  • Salt and pepper to taste
  • Butter for greasing the pan
  • Optional: hot sauce or your favorite condiment

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the croissants in half horizontally and place them on a baking sheet lined with parchment paper.
  3. In a skillet over medium heat, cook bacon until crispy or crumble and brown the sausage. Remove from heat and set aside.
  4. Rinse the spinach leaves under cold water and pat dry.
  5. In a bowl, crack the eggs, add milk, and season with salt and pepper. Whisk until combined and slightly frothy.
  6. In a non-stick skillet, melt butter over medium heat. Pour in the egg mixture and let sit for a few seconds before stirring. Cook until just set, about 3-4 minutes, then remove from heat.
  7. On the bottom half of each croissant, place a generous amount of scrambled eggs.
  8. Sprinkle about 1/4 cup of shredded cheddar cheese over the eggs.
  9. Layer the cooked bacon or sausage evenly among the croissants.
  10. Place a few fresh spinach leaves on top of the meat.
  11. Place the top half of the croissant over the fillings and gently press down.
  12. Place the assembled sandwiches back on the baking sheet and bake for 10-12 minutes, until golden brown and cheese is melted.
  13. Ensure they don’t over-brown; they should be crispy on the outside and warm inside.
  14. Let the sandwiches cool for a minute before serving.
  15. Drizzle with hot sauce or your favorite condiment if desired.
  16. Serve warm, either on a plate or wrapped in parchment paper.
