Instructions

  1. Cut the kielbasa sausage into bite-sized pieces, aiming for about 1-inch pieces for even cooking.
  2. Measure out the barbecue sauce, honey, soy sauce, and Dijon mustard.
  3. In a small bowl, combine garlic powder, onion powder, black pepper, and red pepper flakes (if using).
  4. In a medium-sized mixing bowl, whisk together the barbecue sauce, honey, soy sauce, and Dijon mustard until well blended.
  5. Sprinkle in the garlic powder, onion powder, black pepper, and red pepper flakes, whisking until fully incorporated.
  6. Plug in the crock pot and set it to low heat (or high if short on time).
  7. Place the cut kielbasa pieces into the crock pot, distributing them evenly.
  8. Pour the prepared sauce over the kielbasa and gently stir to coat each piece.
  9. Cover the crock pot and cook on low for 4-6 hours or on high for 2-3 hours, checking for doneness around the 2-hour mark if on high.
  10. Ensure the kielbasa bites are heated through and coated in a thick sauce. For a thicker sauce, cook uncovered on high for an additional 30 minutes.
  11. Sprinkle freshly chopped parsley on top before serving.
  12. Use a slotted spoon to serve the kielbasa bites in a bowl or on a platter, or serve over rice or with toothpicks for easy snacking.
