- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 cup buttermilk
- Vegetable oil, for frying
- 8 small corn or flour tortillas
- 1 cup shredded cabbage (green or purple)
- 1 avocado, sliced
- 1/2 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Hot sauce, for serving (optional)
Instructions
- Rinse the shrimp under cold water and pat them dry with paper towels.
- In a large bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.
- In another bowl, whisk together the eggs and buttermilk until well combined.
- Dip each shrimp into the buttermilk mixture, allowing excess to drip off, then dredge in the flour-cornmeal mixture. Place the coated shrimp on a plate and set aside.
- In a large skillet or deep frying pan, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).
- Carefully add the shrimp to the hot oil in batches, frying for about 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to remove the shrimp and transfer to a plate lined with paper towels.
- Repeat the frying process with the remaining shrimp, adjusting the heat as necessary.
- While the shrimp are frying, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap in foil and place in a preheated oven at 350°F (175°C) for about 10 minutes.
- Assemble the tacos by placing a generous amount of shredded cabbage on each tortilla.
- Add a few pieces of crispy shrimp on top of the cabbage.
- Top with slices of avocado and a sprinkle of fresh cilantro.
- Squeeze a wedge of lime over each taco and drizzle with hot sauce if desired.
- Arrange the assembled tacos on a serving platter with extra lime wedges and hot sauce on the side.
