- 1 pound chicken thighs, boneless and skinless
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon baking powder
- 1 large egg
- 1/2 cup buttermilk
- Vegetable oil, for frying
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1 tablespoon water
- 1 teaspoon sesame oil (optional)
Instructions
- Cut the chicken thighs into bite-sized pieces (about 1 to 1.5 inches).
- In a large bowl, combine the chicken pieces with buttermilk. Marinate for at least 30 minutes, or up to 2 hours.
- In another bowl, mix together the flour, salt, black pepper, garlic powder, onion powder, paprika, and baking powder.
- In a small bowl, beat the egg until well mixed.
- Remove chicken from buttermilk, allowing excess to drip off. Dip into the beaten egg, then coat thoroughly in the seasoned flour mixture.
- Place coated chicken pieces on a wire rack or plate and let them rest for about 10 minutes.
- In a large skillet or Dutch oven, heat enough vegetable oil to cover the bottom by about 1 inch to 350°F (175°C).
- Add chicken pieces in batches, frying for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove chicken from oil and place on a plate lined with paper towels to drain excess oil.
- In a small saucepan, combine honey, soy sauce, minced garlic, and rice vinegar. Stir well.
- Bring the mixture to a gentle simmer over medium heat, cooking for about 3-4 minutes.
- Mix cornstarch with water to create a slurry. Slowly pour into the simmering sauce while stirring. Cook for an additional 1-2 minutes until thickened. Add sesame oil if desired.
- In a large mixing bowl, add the crispy fried chicken pieces and pour the honey garlic sauce over. Toss gently to coat.
Notes
- For extra crunch, double-dip the chicken in the egg and flour mixture.
- Adjust the sweetness of the sauce by adding more or less honey according to your taste.
