- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 3/4 cup warm water (about 110°F)
- 1 tablespoon olive oil
- 1 cup cooked chicken, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 egg, beaten (for egg wash)
- Marinara sauce (for dipping)
Instructions
- In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the yeast mixture along with the olive oil.
- Mix the ingredients until they form a dough. If too sticky, add more flour, one tablespoon at a time.
- Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
- While the dough rises, prepare the filling by combining shredded chicken, mozzarella, ricotta, Parmesan, garlic powder, Italian seasoning, black pepper, and red pepper flakes in a bowl. Mix well and set aside.
- Once the dough has risen, punch it down and divide it into 4 equal pieces.
- Roll each piece into a circle about 6-8 inches in diameter.
- Spoon filling onto one half of each circle, leaving a 1-inch border.
- Fold the other half over the filling and press edges to seal. Use a fork to crimp edges if desired.
- Place calzones on a parchment-lined baking sheet and brush tops with beaten egg.
- Preheat oven to 400°F (200°C). Bake calzones for 20-25 minutes until golden brown and crispy.
- Let cool for a few minutes before serving with marinara sauce for dipping.
