- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the pasta and cook according to package instructions until al dente (8-10 minutes), stirring occasionally.
- Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
- In a large skillet, heat olive oil over medium-high heat.
- Season chicken pieces with salt and pepper, then add to the skillet in a single layer.
- Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional 30 seconds, stirring constantly.
- Toss in halved cherry tomatoes and cook for 2-3 minutes until softened.
- Pour in heavy cream and chicken broth, stirring to combine. Let it bubble gently.
- Add Italian seasoning and simmer for 5 minutes to thicken. Adjust consistency with reserved pasta water if needed.
- Stir in grated Parmesan cheese gradually until melted and creamy.
- Return cooked chicken to the skillet, mixing it into the sauce.
- Add drained pasta, tossing until well coated. Adjust seasoning with salt and pepper if needed.
- Plate the pasta in shallow bowls and garnish with fresh basil leaves and extra Parmesan cheese if desired.
- Serve immediately while hot and creamy.
