  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the pasta and cook according to package instructions until al dente (8-10 minutes), stirring occasionally.
  3. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
  4. In a large skillet, heat olive oil over medium-high heat.
  5. Season chicken pieces with salt and pepper, then add to the skillet in a single layer.
  6. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  7. In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent.
  8. Add minced garlic and cook for an additional 30 seconds, stirring constantly.
  9. Toss in halved cherry tomatoes and cook for 2-3 minutes until softened.
  10. Pour in heavy cream and chicken broth, stirring to combine. Let it bubble gently.
  11. Add Italian seasoning and simmer for 5 minutes to thicken. Adjust consistency with reserved pasta water if needed.
  12. Stir in grated Parmesan cheese gradually until melted and creamy.
  13. Return cooked chicken to the skillet, mixing it into the sauce.
  14. Add drained pasta, tossing until well coated. Adjust seasoning with salt and pepper if needed.
  15. Plate the pasta in shallow bowls and garnish with fresh basil leaves and extra Parmesan cheese if desired.
  16. Serve immediately while hot and creamy.
