  • Total Time: 55 minutes
  • Yield: 8-10 servings 1x

Description

A classic, comforting Creamed Corn Casserole made with creamed corn, whole kernel corn, sour cream, and corn muffin mix, baked to golden perfection. Optional cheddar cheese adds a delicious cheesy topping.

Ingredients

Scale
  • 2 (14.75 ounce) cans creamed corn
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 (8.5 ounce) package corn muffin mix (such as Jiffy)
  • 1 large egg, beaten
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Pinch of salt (optional, taste first)

Instructions

  1. Preheat: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine Corns: In a large bowl, combine creamed corn and drained whole kernel corn.
  3. Add Sour Cream: Fold in sour cream until incorporated.
  4. Incorporate Butter: Stir in melted butter until smooth.
  5. Add Corn Muffin Mix: Gently fold in corn muffin mix until just combined (a few lumps are okay).
  6. Beat in Egg: Stir in beaten egg until smooth.
  7. Season: Add black pepper, garlic powder, and salt (if desired). Taste and adjust seasonings.
  8. Add Cheese (Optional): Stir in half of the shredded cheddar cheese.
  9. Pour and Top: Pour mixture into the prepared baking dish, spreading evenly. Sprinkle remaining cheddar cheese over the top (if using).
  10. Bake: Bake for 30-40 minutes, or until golden brown and set. A toothpick inserted into the center should come out clean or with a few moist crumbs.
  11. Rest: Let rest for 10 minutes before serving.
