A classic, comforting Creamed Corn Casserole made with creamed corn, whole kernel corn, sour cream, and corn muffin mix, baked to golden perfection. Optional cheddar cheese adds a delicious cheesy topping.

- 1 (15.25 ounce) can whole kernel corn, drained
- 1 cup sour cream
- 1/2 cup butter, melted
- 1 (8.5 ounce) package corn muffin mix (such as Jiffy)
- 1 large egg, beaten
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Pinch of salt (optional, taste first)
Instructions
- Preheat: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Combine Corns: In a large bowl, combine creamed corn and drained whole kernel corn.
- Add Sour Cream: Fold in sour cream until incorporated.
- Incorporate Butter: Stir in melted butter until smooth.
- Add Corn Muffin Mix: Gently fold in corn muffin mix until just combined (a few lumps are okay).
- Beat in Egg: Stir in beaten egg until smooth.
- Season: Add black pepper, garlic powder, and salt (if desired). Taste and adjust seasonings.
- Add Cheese (Optional): Stir in half of the shredded cheddar cheese.
- Pour and Top: Pour mixture into the prepared baking dish, spreading evenly. Sprinkle remaining cheddar cheese over the top (if using).
- Bake: Bake for 30-40 minutes, or until golden brown and set. A toothpick inserted into the center should come out clean or with a few moist crumbs.
- Rest: Let rest for 10 minutes before serving.
