Instructions
- In a microwave-safe mug, add 1/2 cup of well-drained cottage cheese and mash it until smooth.
- Add 1/4 cup of unsweetened cocoa powder and mix well.
- Pour in 1/4 cup of honey or maple syrup and stir to combine.
- Add 1/4 cup of almond flour, 1/4 teaspoon of baking powder, 1/4 teaspoon of salt, and 1/2 teaspoon of vanilla extract. Mix until smooth and lump-free.
- If desired, fold in 1/4 cup of chocolate chips.
- Grease the inside of the mug with cooking spray or a small amount of oil.
- Pour the brownie batter into the greased mug, filling it halfway.
- Microwave on high for 1 minute. Check for doneness; the brownie should be set but slightly gooey in the center.
- If needed, continue microwaving in 10-15 second intervals until cooked to your liking.
- Carefully remove the mug from the microwave and let it cool for 2-3 minutes.
