- 1/4 cup unsalted butter

Instructions
- In a medium saucepan, combine the water, butter, sugar, and salt. Place it over medium heat and bring the mixture to a gentle boil, stirring occasionally to help the butter melt completely.
- Once boiling, remove from heat and immediately add the flour and baking powder. Stir vigorously with a wooden spoon until the dough forms a ball, about 1-2 minutes.
- Allow the dough to cool for about 5 minutes to prevent the eggs from cooking when added.
- Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract until fully incorporated.
- In a deep skillet or heavy-bottomed pot, pour enough vegetable oil to fill it about 2 inches deep. Heat the oil over medium heat until it reaches 350°F (175°C). Test the oil by dropping a small piece of dough into it; if it sizzles and rises, its ready.
- Prepare a plate lined with paper towels to drain the churro donut bites after frying.
- Transfer the dough into a piping bag fitted with a large star tip or use a zip-top bag with the corner snipped off.
- Pipe small rounds of dough (about 1 inch in diameter) directly into the hot oil, frying in batches if necessary. Fry each batch for about 2-3 minutes, or until golden brown and puffed up.
- Using a slotted spoon, remove the churro bites from the oil and place them on the prepared paper towel-lined plate to drain excess oil.
- In a shallow bowl, combine the 1/2 cup of granulated sugar and ground cinnamon. Mix well.
- While warm, roll the churro donut bites in the cinnamon-sugar mixture until fully coated.
- Arrange the coated churro donut bites on a serving platter. Drizzle with chocolate sauce if desired.
