  • 1 pint cherry tomatoes
  • 2 zucchini, cut into 1/2-inch thick rounds
  • 2 yellow squash, cut into 1/2-inch thick rounds
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)
  • Optional: Fresh basil leaves for garnish

Instructions

  1. Prep Vegetables and Sausage: Wash and dry all vegetables. Cut bell peppers and red onion into 1-inch pieces. Cut zucchini and yellow squash into 1/2-inch thick rounds. Leave cherry tomatoes whole. Cut Italian chicken sausage into 1-inch pieces.
  2. Marinate Vegetables (Optional): In a large bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, garlic powder, salt, and pepper. Add bell peppers, red onion, zucchini, and yellow squash to the bowl and toss to coat. Marinate for at least 30 minutes (or up to a few hours in the refrigerator).
  3. Assemble Skewers: If using wooden skewers, soak them in water for at least 30 minutes. Thread the vegetables and sausage onto the skewers, alternating ingredients. Leave a little space between each piece.
  4. Cook Skewers (Grilling): Preheat grill to medium-high heat. Place skewers on the grill grates. Cook for 10-15 minutes, turning occasionally, until the sausage is cooked through and the vegetables are tender and slightly charred. Use a meat thermometer to ensure the sausage reaches an internal temperature of 165°F (74°C).
  5. Cook Skewers (Baking): Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place skewers on the baking sheet. Bake for 20-25 minutes, turning halfway through, until the sausage is cooked through and the vegetables are tender. Use a meat thermometer to ensure the sausage reaches an internal temperature of 165°F (74°C). Broil for the last few minutes for more char, if desired.
  6. Serve: Remove skewers from the grill or oven and let them rest for a few minutes before serving. Serve over rice or quinoa, with a side salad, or with a dipping sauce. Garnish with fresh basil leaves, if desired.
