  • 8 oz. chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (red and green for color)
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of water. Add chow mein noodles and cook according to package instructions (3-5 minutes) until al dente. Drain and rinse under cold water. Set aside.
  2. In a medium bowl, combine sliced chicken with 1 tablespoon soy sauce, a pinch of salt, and pepper. Mix well and let marinate for 15-20 minutes.
  3. Wash and chop broccoli into small florets, slice bell peppers into thin strips, and julienne carrots. Chop green onions, separating the white parts from the green tops.
  4. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  5. In the same skillet, add another tablespoon of vegetable oil. Sauté minced garlic and white parts of green onions for 30 seconds. Add broccoli, bell peppers, and carrots; stir-fry for 3-4 minutes until tender-crisp. Add bean sprouts and stir-fry for an additional minute.
  6. Return cooked chicken to the skillet. In a small bowl, mix remaining 3 tablespoons soy sauce, oyster sauce, cornstarch, and chicken broth until cornstarch is dissolved. Pour sauce over chicken and vegetables, stirring to coat. Cook for 2-3 minutes until sauce thickens.
  7. Add cooked chow mein noodles to the skillet, gently tossing to combine with chicken and vegetables. If dry, add a splash of chicken broth or more soy sauce. Stir-fry for another 2-3 minutes until heated through.
  8. Taste and adjust seasoning if necessary. Garnish with green tops of chopped green onions.
  9. Serve hot, either directly from the skillet or plated in bowls. Pairs well with sweet and sour sauce or chili sauce.
