- 8 oz. chow mein noodles
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breast, thinly sliced
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup bell peppers, sliced (red and green for color)
- 1 cup carrots, julienned
- 1 cup bean sprouts
- 3 green onions, chopped
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- Salt and pepper to taste
Instructions
- Boil a large pot of water. Add chow mein noodles and cook according to package instructions (3-5 minutes) until al dente. Drain and rinse under cold water. Set aside.
- In a medium bowl, combine sliced chicken with 1 tablespoon soy sauce, a pinch of salt, and pepper. Mix well and let marinate for 15-20 minutes.
- Wash and chop broccoli into small florets, slice bell peppers into thin strips, and julienne carrots. Chop green onions, separating the white parts from the green tops.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Sauté minced garlic and white parts of green onions for 30 seconds. Add broccoli, bell peppers, and carrots; stir-fry for 3-4 minutes until tender-crisp. Add bean sprouts and stir-fry for an additional minute.
- Return cooked chicken to the skillet. In a small bowl, mix remaining 3 tablespoons soy sauce, oyster sauce, cornstarch, and chicken broth until cornstarch is dissolved. Pour sauce over chicken and vegetables, stirring to coat. Cook for 2-3 minutes until sauce thickens.
- Add cooked chow mein noodles to the skillet, gently tossing to combine with chicken and vegetables. If dry, add a splash of chicken broth or more soy sauce. Stir-fry for another 2-3 minutes until heated through.
- Taste and adjust seasoning if necessary. Garnish with green tops of chopped green onions.
- Serve hot, either directly from the skillet or plated in bowls. Pairs well with sweet and sour sauce or chili sauce.
