- 2 cups broccoli florets
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse chicken breasts under cold water and pat dry with paper towels.
- Season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts.
- Cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
- Remove chicken from skillet and let rest for 5 minutes before slicing.
- In the same skillet, add broccoli florets and sauté over medium heat for 3-4 minutes until bright green and slightly tender.
- Remove broccoli from skillet and set aside with sliced chicken.
- Bring salted water to a boil in a large pot.
- Add fettuccine pasta and cook according to package instructions (8-10 minutes) until al dente. Reserve 1 cup of pasta water, then drain.
- In the same skillet, reduce heat to medium-low and add minced garlic. Sauté for 30 seconds until fragrant.
- Pour in heavy cream and simmer for 2-3 minutes, stirring occasionally.
- Gradually add grated Parmesan cheese, stirring until melted and smooth. Adjust consistency with reserved pasta water if needed.
- Season with additional salt and pepper to taste.
- Add cooked fettuccine to the skillet and toss in the sauce until well coated.
- Add sautéed broccoli and sliced chicken, gently tossing to combine.
- If the pasta seems dry, add more reserved pasta water until desired creaminess is reached.
- Plate the pasta in bowls or on individual plates.
- Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
- Serve immediately while hot and creamy.
