  • 2 cups broccoli florets
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse chicken breasts under cold water and pat dry with paper towels.
  2. Season both sides with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts.
  4. Cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  5. Remove chicken from skillet and let rest for 5 minutes before slicing.
  6. In the same skillet, add broccoli florets and sauté over medium heat for 3-4 minutes until bright green and slightly tender.
  7. Remove broccoli from skillet and set aside with sliced chicken.
  8. Bring salted water to a boil in a large pot.
  9. Add fettuccine pasta and cook according to package instructions (8-10 minutes) until al dente. Reserve 1 cup of pasta water, then drain.
  10. In the same skillet, reduce heat to medium-low and add minced garlic. Sauté for 30 seconds until fragrant.
  11. Pour in heavy cream and simmer for 2-3 minutes, stirring occasionally.
  12. Gradually add grated Parmesan cheese, stirring until melted and smooth. Adjust consistency with reserved pasta water if needed.
  13. Season with additional salt and pepper to taste.
  14. Add cooked fettuccine to the skillet and toss in the sauce until well coated.
  15. Add sautéed broccoli and sliced chicken, gently tossing to combine.
  16. If the pasta seems dry, add more reserved pasta water until desired creaminess is reached.
  17. Plate the pasta in bowls or on individual plates.
  18. Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
  19. Serve immediately while hot and creamy.
