- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
- Drain any excess fat from the skillet carefully.
- Add the chopped onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.
- Stir in the Worcestershire sauce, salt, black pepper, paprika, oregano, and thyme. Mix well to combine.
- In a separate bowl, combine the uncooked rice and beef broth.
- Add the rice and broth mixture to the skillet with the beef mixture. Stir until well combined.
- Mix in the cream of mushroom soup until fully incorporated.
- If using, add the frozen peas.
- Preheat your oven to 350°F (175°C).
- Transfer the beef and rice mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Layer the shredded cheddar cheese over the top, followed by the shredded mozzarella cheese.
- Cover the baking dish with aluminum foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let the casserole sit for 5-10 minutes before serving.
- Scoop out portions and serve with a sprinkle of fresh parsley on top.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.
