  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
  2. Drain any excess fat from the skillet carefully.
  3. Add the chopped onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.
  4. Stir in the Worcestershire sauce, salt, black pepper, paprika, oregano, and thyme. Mix well to combine.
  5. In a separate bowl, combine the uncooked rice and beef broth.
  6. Add the rice and broth mixture to the skillet with the beef mixture. Stir until well combined.
  7. Mix in the cream of mushroom soup until fully incorporated.
  8. If using, add the frozen peas.
  9. Preheat your oven to 350°F (175°C).
  10. Transfer the beef and rice mixture into a greased 9×13 inch baking dish, spreading it evenly.
  11. Layer the shredded cheddar cheese over the top, followed by the shredded mozzarella cheese.
  12. Cover the baking dish with aluminum foil.
  13. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  14. Let the casserole sit for 5-10 minutes before serving.
  15. Scoop out portions and serve with a sprinkle of fresh parsley on top.
  16. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.
