  • 1 pound (450g) boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 2 large eggs
  • 1/4 cup chopped fresh parsley (or 1 tablespoon dried parsley)
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Cut the chicken breasts into smaller chunks (about 1-inch pieces).
  2. Place the chicken pieces in a food processor and pulse until finely chopped but not pureed.
  3. Transfer the processed chicken to a large mixing bowl.
  4. Add the shredded cheddar cheese and grated Parmesan cheese to the bowl.
  5. Mix in the all-purpose flour and breadcrumbs.
  6. Crack the two large eggs into the mixture.
  7. Add the chopped parsley, minced garlic, onion powder, paprika, salt, and pepper. Mix well.
  8. Shape the mixture into patties using a 1/4 cup measuring cup, about 1/2 inch thick.
  9. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  10. Carefully add the fritters to the skillet, cooking in batches to avoid overcrowding.
  11. Fry the fritters for about 3-4 minutes on each side until golden brown and cooked through.
  12. Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
  13. Serve warm with a dipping sauce of your choice, garnished with additional chopped parsley if desired.
