- 1 pound of boneless, skinless chicken breasts
- 1 cup of BBQ sauce
- 1 cup of shredded mozzarella cheese
- 1 cup of shredded cheddar cheese
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- 1 tablespoon of olive oil
- 1 package of refrigerated pizza dough (about 13.8 ounces)
- 1/4 cup of fresh cilantro, chopped (optional)
- 1 egg, beaten
- Flour, for dusting
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the boneless, skinless chicken breasts to the skillet. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.
- Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Ensure the chicken is cooked through and no longer pink in the center.
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Then, shred the chicken using two forks or chop it into small pieces.
- In a mixing bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is fully coated.
- On a clean, floured surface, roll out the refrigerated pizza dough into a rectangle, approximately 12×16 inches in size. If the dough is too sticky, sprinkle a little more flour as needed.
- Once rolled out, use a pizza cutter or knife to cut the dough into smaller rectangles, about 4×4 inches each. You should be able to get around 12-16 pieces, depending on how large you cut them.
- Take one rectangle of dough and place a generous tablespoon of the BBQ chicken mixture in the center.
- Sprinkle about a tablespoon of shredded mozzarella cheese and a tablespoon of shredded cheddar cheese on top of the chicken mixture.
- Carefully fold the edges of the dough over the filling to create a pocket. Pinch the edges together to seal the roll tightly. Make sure there are no openings for the filling to escape during baking.
- Repeat this process for the remaining pieces of dough until all the chicken mixture is used up.
- Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
- Place the assembled pizza rolls on the prepared baking sheet, leaving some space between each roll to allow for expansion during baking.
- Brush the tops of the pizza rolls with the beaten egg to give them a golden-brown finish when baked.
- If desired, sprinkle a little extra cheese on top of each roll for added flavor and presentation.
- Once all the pizza rolls are assembled and placed on the baking sheet, place them in the preheated oven.
- Bake for 15-20 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
- Keep an eye on them during the last few minutes of baking to ensure they do not over-brown.
- Once baked, remove the pizza rolls from the oven and let them cool for a few minutes on the baking sheet.
- Transfer the rolls to a serving platter. If you like, garnish with chopped fresh cilantro for a pop of color and flavor.
