  • 1 pound of boneless, skinless chicken breasts
  • 1 cup of BBQ sauce
  • 1 cup of shredded mozzarella cheese
  • 1 cup of shredded cheddar cheese
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of olive oil
  • 1 package of refrigerated pizza dough (about 13.8 ounces)
  • 1/4 cup of fresh cilantro, chopped (optional)
  • 1 egg, beaten
  • Flour, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the boneless, skinless chicken breasts to the skillet. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.
  4. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Ensure the chicken is cooked through and no longer pink in the center.
  5. Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Then, shred the chicken using two forks or chop it into small pieces.
  6. In a mixing bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is fully coated.
  7. On a clean, floured surface, roll out the refrigerated pizza dough into a rectangle, approximately 12×16 inches in size. If the dough is too sticky, sprinkle a little more flour as needed.
  8. Once rolled out, use a pizza cutter or knife to cut the dough into smaller rectangles, about 4×4 inches each. You should be able to get around 12-16 pieces, depending on how large you cut them.
  9. Take one rectangle of dough and place a generous tablespoon of the BBQ chicken mixture in the center.
  10. Sprinkle about a tablespoon of shredded mozzarella cheese and a tablespoon of shredded cheddar cheese on top of the chicken mixture.
  11. Carefully fold the edges of the dough over the filling to create a pocket. Pinch the edges together to seal the roll tightly. Make sure there are no openings for the filling to escape during baking.
  12. Repeat this process for the remaining pieces of dough until all the chicken mixture is used up.
  13. Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
  14. Place the assembled pizza rolls on the prepared baking sheet, leaving some space between each roll to allow for expansion during baking.
  15. Brush the tops of the pizza rolls with the beaten egg to give them a golden-brown finish when baked.
  16. If desired, sprinkle a little extra cheese on top of each roll for added flavor and presentation.
  17. Once all the pizza rolls are assembled and placed on the baking sheet, place them in the preheated oven.
  18. Bake for 15-20 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
