Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs, vegetable oil, and vanilla extract until well combined and slightly frothy.
- Gradually add the yellow cake mix to the wet ingredients, folding gently until just combined. Avoid overmixing; a few lumps are fine.
- In a separate bowl, mix together 1/4 cup granulated sugar, 2 teaspoons ground cinnamon, and 1/4 teaspoon salt. Add this mixture to the cookie dough and stir until well incorporated.
- For best texture, chill the dough in the refrigerator for about 30 minutes. This step is optional but recommended.
- In a shallow bowl, mix together the remaining 1/4 cup granulated sugar and 2 teaspoons ground cinnamon.
- Scoop about 1.5 tablespoons of dough for each cookie and roll into a smooth ball.
- Roll each dough ball in the cinnamon sugar mixture until fully coated. Place on a parchment-lined baking sheet, leaving about 2 inches between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look set.
