- 8 ounces fettuccine or linguine pasta
- 1 medium onion, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the sliced steak with Cajun seasoning, ensuring all sides are coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned steak strips in a single layer and sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from skillet and cover with foil to keep warm.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion for 2-3 minutes until translucent. Add the sliced red and green bell peppers and cook for another 3-4 minutes until tender. Stir in the minced garlic and cook for an additional 30 seconds.
- Meanwhile, bring a large pot of salted water to a boil. Cook the fettuccine or linguine according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain the rest and set aside.
- In the skillet with the sautéed vegetables, pour in the heavy cream and chicken broth. Stir to combine and bring to a gentle simmer for 3-5 minutes until slightly thickened. Add the halved cherry tomatoes and cook for another 2-3 minutes until softened.
- Gradually stir in the shredded Parmesan cheese until melted and incorporated. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
- Add the cooked pasta to the skillet and toss to coat with the sauce and vegetables. Return the cooked steak to the skillet and gently fold it into the mixture, heating through for 1-2 minutes.
- Taste and season with salt and pepper as needed.
- Remove from heat and serve hot, garnished with freshly chopped parsley and extra Parmesan cheese if desired.
