  • 1 bunch broccoli rabe, trimmed and chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the chopped broccoli rabe and cook for 2-3 minutes until bright green and slightly tender.
  3. Transfer the broccoli rabe to a bowl of ice water to stop the cooking process.
  4. Once cooled, drain and squeeze out excess water. Set aside.
  5. In a large skillet, heat olive oil over medium heat.
  6. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
  7. Add blanched broccoli rabe, season with salt and pepper, and sauté for an additional 3-4 minutes.
  8. Remove from heat and stir in lemon juice. Set aside to cool slightly.
  9. If using store-bought dough, let it sit at room temperature for 30 minutes. For homemade, prepare according to your recipe and let it rise.
  10. Preheat oven to 475°F (245°C), placing a pizza stone inside if you have one.
  11. Roll out the pizza dough on a floured surface to about 12 inches in diameter.
  12. Transfer the rolled-out dough to a pizza peel or a baking sheet lined with parchment paper.
  13. Spread ricotta cheese evenly over the dough, leaving a small border for the crust.
  14. Distribute the sautéed broccoli rabe mixture over the ricotta layer.
  15. Sprinkle shredded mozzarella cheese over the top.
  16. Finish with grated Parmesan cheese.
  17. Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven.
  18. Bake for 12-15 minutes until the crust is golden brown and the cheese is bubbling.
  19. Keep an eye on it to prevent burning.
  20. Remove the pizza from the oven and let it cool for a couple of minutes before slicing.
  21. Garnish with fresh basil leaves and drizzle with olive oil if desired.
