- 1 pound pizza dough (store-bought or homemade)
- 1 bunch broccoli rabe, trimmed and chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh basil leaves for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the chopped broccoli rabe and cook for 2-3 minutes until bright green and slightly tender.
- Transfer the broccoli rabe to a bowl of ice water to stop the cooking process.
- Once cooled, drain and squeeze out excess water. Set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Add blanched broccoli rabe, season with salt and pepper, and sauté for an additional 3-4 minutes.
- Remove from heat and stir in lemon juice. Set aside to cool slightly.
- If using store-bought dough, let it sit at room temperature for 30 minutes. For homemade, prepare according to your recipe and let it rise.
- Preheat oven to 475°F (245°C), placing a pizza stone inside if you have one.
- Roll out the pizza dough on a floured surface to about 12 inches in diameter.
- Transfer the rolled-out dough to a pizza peel or a baking sheet lined with parchment paper.
- Spread ricotta cheese evenly over the dough, leaving a small border for the crust.
- Distribute the sautéed broccoli rabe mixture over the ricotta layer.
- Sprinkle shredded mozzarella cheese over the top.
- Finish with grated Parmesan cheese.
- Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven.
- Bake for 12-15 minutes until the crust is golden brown and the cheese is bubbling.
- Keep an eye on it to prevent burning.
- Remove the pizza from the oven and let it cool for a couple of minutes before slicing.
- Garnish with fresh basil leaves and drizzle with olive oil if desired.
