  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked breakfast sausage, crumbled (or bacon, if preferred)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh parsley (optional)
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, black pepper, garlic powder, and onion powder. Whisk until well mixed.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until fully combined.
  4. Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix.
  5. Once combined, add the shredded cheese, crumbled sausage (or bacon), diced bell peppers, diced onions, and chopped parsley (if using). Gently fold until evenly distributed.
  6. Spray a muffin tin with cooking spray or line with muffin liners.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully take the muffins out and place them on a wire rack to cool completely.
  10. Enjoy the muffins as is, or with cream cheese or butter. They can be served alongside fresh fruit or yogurt.
