- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cooked breakfast sausage, crumbled (or bacon, if preferred)
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onions
- 1/4 cup chopped fresh parsley (optional)
- Cooking spray or muffin liners
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, black pepper, garlic powder, and onion powder. Whisk until well mixed.
- In another bowl, whisk together the milk, vegetable oil, and eggs until fully combined.
- Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix.
- Once combined, add the shredded cheese, crumbled sausage (or bacon), diced bell peppers, diced onions, and chopped parsley (if using). Gently fold until evenly distributed.
- Spray a muffin tin with cooking spray or line with muffin liners.
- Fill each muffin cup about 2/3 full with the batter.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully take the muffins out and place them on a wire rack to cool completely.
- Enjoy the muffins as is, or with cream cheese or butter. They can be served alongside fresh fruit or yogurt.

- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
