  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup mixed fresh fruits (such as strawberries, blueberries, kiwi, and bananas)
  • 1/4 cup fruit preserves (apricot or strawberry)
  • Mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, add the softened cream cheese. Make sure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a whisk, beat the cream cheese until it’s smooth and creamy (about 2-3 minutes).
  3. Gradually add the powdered sugar to the cream cheese, mixing well after each addition to avoid lumps.
  4. Once the sugar is fully incorporated, add the vanilla extract and mix until combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form (about 3-5 minutes with a hand mixer).
  6. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  7. Set the cream cheese filling aside; it should be smooth and fluffy.
  8. Wash all the fresh fruits thoroughly under cold water.
  9. For strawberries, remove the green tops and slice them into thin rounds or halves.
  10. For kiwi, peel the skin and slice it into thin rounds or half-moons.
  11. For bananas, peel and slice them into thin rounds. Toss the banana slices in a little lemon juice to prevent browning.
  12. Rinse the blueberries and set them aside.
  13. Arrange the prepared fruits on a plate or in a bowl for easy access when assembling the tarts.
  14. Place the pre-made tart shell on a serving platter or cake stand.
  15. Spread the cream cheese filling evenly into the tart shell, filling it to the edges.
  16. Arrange the strawberries in a circular pattern around the edge of the tart.
  17. Add kiwi slices in between the strawberries for contrast.
  18. Fill in gaps with banana slices, alternating the direction for a dynamic look.
  19. Sprinkle blueberries evenly over the top.
  20. Gently warm the fruit preserves in a small saucepan over low heat.
  21. Using a pastry brush, lightly glaze the fruits with the warmed fruit preserves.
