Ingredients

Scale
  • 34 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 12 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup crumbled queso fresco or shredded cheese
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Pat the brisket dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the brisket for 4-5 minutes on each side until browned. Remove and set aside.
  3. In the same pot, sauté diced onion for about 5 minutes until translucent. Add minced garlic and sauté for an additional minute.
  4. Pour in beef broth, scraping the bottom of the pot. Add diced tomatoes, tomato paste, Worcestershire sauce, chili powder, cumin, smoked paprika, oregano, and a pinch of salt and pepper. Stir to combine.
  5. Return the brisket to the pot, ensuring it’s submerged in the liquid. Bring to a gentle simmer, cover, and transfer to a preheated oven at 300°F (150°C). Braise for 3-4 hours until fork-tender. Let rest for 15 minutes before slicing.
  6. Shred the brisket into bite-sized pieces using two forks. Return to the pot with the braising liquid and stir to combine.
  7. Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side. Stack and cover with a towel to keep warm.
  8. Fill each tortilla with shredded brisket, then top with lettuce, diced tomatoes, queso fresco, avocado, and cilantro. Serve with lime wedges.
