  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Additional toppings: sliced banana, extra blueberries, nuts, or seeds (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the rolled oats and chia seeds (if using). Stir them together to ensure they are evenly mixed.
  2. In a separate bowl, mash the ripe banana with a fork until it’s smooth. You want it to be creamy, but a few small lumps are okay for texture.
  3. Add the milk, honey or maple syrup, vanilla extract, and a pinch of salt to the mashed banana. Whisk everything together until well combined.
  4. Pour the banana mixture into the bowl with the oats and chia seeds. Stir everything together until the oats are fully coated with the banana mixture.
  5. If using fresh blueberries, rinse them under cold water and gently pat them dry. If using frozen blueberries, no need to thaw.
  6. Gently fold the blueberries into the oat mixture, being careful not to mash them too much.
  7. Divide the oat mixture evenly into two jars or containers with lids. Seal the jars tightly and place them in the refrigerator.
  8. Let the jars sit overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
  9. When ready to eat, take the jars out of the fridge. If the oats are too thick, stir in a splash of milk.
  10. Top with additional sliced banana, extra blueberries, and a sprinkle of nuts or seeds. Enjoy cold or warm in the microwave for 30-60 seconds.
