  • 8 ounces of rotini pasta
  • 6 slices of bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the rotini pasta and stir occasionally. Cook according to package instructions (8-10 minutes) until al dente.
  3. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to drain completely.
  4. In a large skillet over medium heat, cook the bacon until crispy (6-8 minutes), flipping halfway through.
  5. Remove bacon and place on a paper towel-lined plate to absorb excess grease. Let cool and chop into bite-sized pieces.
  6. In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and garlic powder until smooth. Adjust seasoning with salt and pepper to taste.
  7. In a large mixing bowl, combine cooled rotini pasta, chopped bacon, halved cherry tomatoes, and chopped romaine lettuce.
  8. Pour dressing over the mixture, starting with half and adding more as needed. Gently toss to coat.
  9. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to meld flavors.
  10. Before serving, stir the salad and adjust seasoning if necessary. Serve in individual bowls or on a platter, garnished with extra cherry tomatoes and bacon pieces.
