This BLT Pasta Salad combines the classic flavors of a BLT sandwich with rotini pasta, crispy bacon, fresh cherry tomatoes, and crunchy romaine lettuce, all tossed in a creamy dressing. - 8 ounces of rotini pasta
- 6 slices of bacon
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup green onions, sliced (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the rotini pasta and stir occasionally. Cook according to package instructions (8-10 minutes) until al dente.
- Drain the pasta and rinse under cold water to stop the cooking process. Set aside to drain completely.
- In a large skillet over medium heat, cook the bacon until crispy (6-8 minutes), flipping halfway through.
- Remove bacon and place on a paper towel-lined plate to absorb excess grease. Let cool and chop into bite-sized pieces.
- In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and garlic powder until smooth. Adjust seasoning with salt and pepper to taste.
- In a large mixing bowl, combine cooled rotini pasta, chopped bacon, halved cherry tomatoes, and chopped romaine lettuce.
- Pour dressing over the mixture, starting with half and adding more as needed. Gently toss to coat.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to meld flavors.
- Before serving, stir the salad and adjust seasoning if necessary. Serve in individual bowls or on a platter, garnished with extra cherry tomatoes and bacon pieces.

- For best flavor, prepare the salad a few hours ahead or the night before.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Add fresh lettuce if storing longer.
