A vibrant berry salad with strawberries, blueberries, raspberries, blackberries, and cherries, tossed in a zesty honey-lime dressing and mint. Perfect as a light breakfast, dessert, or side dish!
Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 1 1/2 cups fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 1 cup fresh cherries, pitted and halved
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- Optional: 1/2 cup crumbled feta cheese (for a sweet and savory twist)
Instructions
- Wash and Prepare the Berries: Gently rinse all the berries under cool running water. Pat them dry with a paper towel.
- Slice the Strawberries: Hull the strawberries and slice them into even pieces (about 1/4 inch thick).
- Pit and Halve the Cherries: Pit the cherries using a cherry pitter or paring knife. Halve them.
- Combine the Berries: In a large bowl, gently combine the sliced strawberries, blueberries, raspberries, blackberries, and halved cherries.
- Zest the Lime: Using a microplane or zester, carefully zest the lime (outer green layer only).
- Juice the Lime: Cut the lime in half and juice it.
- Combine the Dressing Ingredients: In a small bowl, whisk together the honey, lime juice, and lime zest until well combined.
- Pour the Dressing Over the Berries: Gently pour the honey-lime dressing over the mixed berries in the large bowl.
- Add the Mint: Sprinkle the chopped fresh mint leaves over the berries.
- Gently Toss: Gently toss the berries, dressing, and mint together until the berries are evenly coated.
- Optional: Add Feta Cheese: If using, gently crumble feta cheese over the top of the salad.
- Chill Before Serving: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours) before serving.
Notes
- Use seasonal berries for the best flavor.
- Adjust the sweetness to your liking.
- For a vegan option, use maple syrup or agave nectar instead of honey and omit the feta cheese.
- Serve with yogurt or ice cream for an extra treat.
- Add nuts or seeds for added texture and flavor.
- Prepare the salad a few hours in advance, but add the dressing just before serving to prevent the berries from becoming soggy.
