Ingredients
Scale
- 1 pound ground beef
- 12 ounces rotini pasta
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil over high heat.
- Add the rotini pasta to the boiling water. Stir occasionally and cook according to package instructions (about 8-10 minutes) until al dente.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat for about a minute.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned and no longer pink.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Sprinkle in the Italian seasoning, and season with salt and pepper to taste. Mix well.
- Pour in the heavy cream and stir to combine, allowing it to heat through for about 2-3 minutes.
- Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy. Adjust the consistency with reserved pasta water if needed.
- Taste the sauce and adjust seasoning as necessary.
- Add the drained rotini pasta to the skillet and toss gently to coat with the sauce.
- Allow the pasta to heat through in the sauce for about 2-3 minutes.
- Use tongs or a large spoon to plate the creamy beef rotini.
- Sprinkle with freshly chopped parsley and additional Parmesan cheese if desired.
- Serve immediately while hot and creamy, paired with a side salad or crusty bread.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a skillet over medium heat, adding a splash of milk or reserved pasta water if the sauce thickens.
- For freezing, consider freezing the cooked beef and pasta separately before adding the cream and cheese.
