- 1 pound ground beef (preferably lean)
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 small onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 cup mushrooms, finely chopped (shiitake or button mushrooms work well)
- 1 carrot, grated
- 3 green onions, chopped
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sriracha (optional, for heat)
- 1 head of butter or iceberg lettuce, leaves separated and washed
- Chopped cilantro, for garnish
- Chopped peanuts, for garnish (optional)
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the chopped onion and cook for 2-3 minutes until translucent.
- Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat.
- Stir in the chopped red bell pepper, mushrooms, and grated carrot. Cook for an additional 3-4 minutes until tender.
- In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha (if using). Pour over the beef mixture and simmer for 2-3 minutes.
- Stir in chopped green onions, taste, and adjust seasoning if necessary.
- While the filling cools, separate and wash the lettuce leaves. Pat dry with a paper towel.
- Lay the leaves on a platter for easy assembly.
- Take a lettuce leaf, spoon in a generous amount of beef filling, and fold the sides over before rolling from the bottom to the top.
- Repeat with remaining leaves and filling. Serve immediately or keep warm.
- Sprinkle chopped cilantro and optional peanuts over the wraps.
- Serve with extra soy sauce or hoisin sauce for dipping, and additional toppings if desired.

- For a vegetarian option, substitute ground beef with a plant-based meat alternative or finely chopped vegetables.
- Adjust the level of sriracha based on your heat preference.
