  • 1 pound ground beef (preferably lean)
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup mushrooms, finely chopped (shiitake or button mushrooms work well)
  • 1 carrot, grated
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional, for heat)
  • 1 head of butter or iceberg lettuce, leaves separated and washed
  • Chopped cilantro, for garnish
  • Chopped peanuts, for garnish (optional)

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  2. Add the chopped onion and cook for 2-3 minutes until translucent.
  3. Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat.
  4. Stir in the chopped red bell pepper, mushrooms, and grated carrot. Cook for an additional 3-4 minutes until tender.
  5. In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha (if using). Pour over the beef mixture and simmer for 2-3 minutes.
  6. Stir in chopped green onions, taste, and adjust seasoning if necessary.
  7. While the filling cools, separate and wash the lettuce leaves. Pat dry with a paper towel.
  8. Lay the leaves on a platter for easy assembly.
  9. Take a lettuce leaf, spoon in a generous amount of beef filling, and fold the sides over before rolling from the bottom to the top.
  10. Repeat with remaining leaves and filling. Serve immediately or keep warm.
  11. Sprinkle chopped cilantro and optional peanuts over the wraps.
  12. Serve with extra soy sauce or hoisin sauce for dipping, and additional toppings if desired.
