  • 3 ripe bananas
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • Optional: additional banana slices for garnish
  • Optional: additional whipped cream for garnish

Instructions

  1. In a medium saucepan, combine the granulated sugar, cornstarch, and salt. Whisk until well mixed to prevent lumps.
  2. In a separate bowl, whisk together the egg yolks and milk until fully combined.
  3. Gradually pour the egg yolk mixture into the saucepan with the dry ingredients, whisking constantly.
  4. Place the saucepan over medium heat, whisking continuously to prevent sticking.
  5. Once the mixture thickens and bubbles, reduce heat to low and cook for an additional 2 minutes, stirring constantly.
  6. Remove from heat and stir in the butter and vanilla extract until fully incorporated.
  7. Allow the custard to cool for about 10 minutes, then slice the bananas.
  8. Layer banana slices at the bottom of the pre-made pie crust (about one banana).
  9. Pour half of the custard filling over the banana slices, spreading evenly.
  10. Add another layer of banana slices on top of the custard.
  11. Pour the remaining custard filling over the second layer of banana slices, smoothing it out.
  12. In a large mixing bowl, pour in the heavy whipping cream and beat on medium speed until it thickens.
  13. Gradually add the powdered sugar while continuing to beat.
  14. Once soft peaks form, add the vanilla extract and beat until stiff peaks form, being careful not to overbeat.
  15. Gently spread the whipped cream over the top of the pie, creating swirls for decoration.
  16. Cover the pie with plastic wrap or aluminum foil, ensuring it doesn’t touch the whipped cream.
  17. Chill in the refrigerator for at least 4 hours, or overnight for best results.
  18. Remove the pie from the refrigerator and uncover.
  19. Garnish with additional banana slices and whipped cream if desired.
  20. Slice into wedges using a sharp knife (dipping in warm water helps).
  21. Serve each slice on a plate and enjoy!
