- 1 pre-made 9-inch pie crust
- 3 ripe bananas
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 large egg yolks
- 2 tablespoons unsalted butter
- Optional: additional banana slices for garnish
- Optional: additional whipped cream for garnish
Instructions
- In a medium saucepan, combine the granulated sugar, cornstarch, and salt. Whisk until well mixed to prevent lumps.
- In a separate bowl, whisk together the egg yolks and milk until fully combined.
- Gradually pour the egg yolk mixture into the saucepan with the dry ingredients, whisking constantly.
- Place the saucepan over medium heat, whisking continuously to prevent sticking.
- Once the mixture thickens and bubbles, reduce heat to low and cook for an additional 2 minutes, stirring constantly.
- Remove from heat and stir in the butter and vanilla extract until fully incorporated.
- Allow the custard to cool for about 10 minutes, then slice the bananas.
- Layer banana slices at the bottom of the pre-made pie crust (about one banana).
- Pour half of the custard filling over the banana slices, spreading evenly.
- Add another layer of banana slices on top of the custard.
- Pour the remaining custard filling over the second layer of banana slices, smoothing it out.
- In a large mixing bowl, pour in the heavy whipping cream and beat on medium speed until it thickens.
- Gradually add the powdered sugar while continuing to beat.
- Once soft peaks form, add the vanilla extract and beat until stiff peaks form, being careful not to overbeat.
- Gently spread the whipped cream over the top of the pie, creating swirls for decoration.
- Cover the pie with plastic wrap or aluminum foil, ensuring it doesnt touch the whipped cream.
- Chill in the refrigerator for at least 4 hours, or overnight for best results.
- Remove the pie from the refrigerator and uncover.
- Garnish with additional banana slices and whipped cream if desired.
- Slice into wedges using a sharp knife (dipping in warm water helps).
- Serve each slice on a plate and enjoy!
