Ingredients
Scale

- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth, leaving a few small lumps for texture.
- Stir the melted butter into the mashed bananas until well combined.
- Sprinkle the baking soda and a pinch of salt over the mixture and stir to combine.
- Add the sugar, beaten egg, and vanilla extract. Mix until smooth and glossy.
- Gently fold in the all-purpose flour, being careful not to overmix.
- Gently fold in the semi-sweet chocolate chips until evenly distributed.
- Line a muffin tin with paper liners or grease it with cooking spray.
- Fill each muffin cup about 2/3 full with the batter.
- Bake in the preheated oven for 18-20 minutes until golden brown.
- Insert a toothpick into the center of a muffin; it should come out clean or with a few crumbs.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Enjoy the muffins warm or at room temperature as a breakfast treat, snack, or dessert.
- Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
- Consider adding a sprinkle of coarse sugar on top before baking for added crunch.
- Pair with coffee, tea, or milk for a delightful treat.
- Substitute half of the flour with whole wheat flour or add spices like cinnamon for extra flavor.
Notes
- For a healthier option, reduce the sugar or substitute with a natural sweetener.
- Feel free to mix in nuts or dried fruit for added texture.
