Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 6 slices of bacon, chopped
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon balsamic vinegar
  • 1/4 cup slivered almonds (optional, for garnish)

Instructions

  1. Wash the green beans thoroughly under cold running water to remove any dirt or debris.
  2. Trim the ends of the green beans by snapping them off or using a knife. Discard the ends.
  3. Place the trimmed green beans in a large pot of salted water and bring to a boil over high heat.
  4. Once boiling, add the green beans and blanch for about 3-4 minutes to maintain their color and crisp texture.
  5. Transfer the blanched green beans to a bowl of ice water to stop the cooking process. Let sit for about 5 minutes, then drain and set aside.
  6. In a large skillet, heat the olive oil over medium heat for about 1 minute.
  7. Add the chopped bacon and cook for 5-7 minutes, stirring occasionally, until crispy and golden brown.
  8. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain excess grease, leaving the drippings in the skillet.
  9. In the same skillet, add the diced onion and sauté over medium heat for about 3-4 minutes until translucent and soft.
  10. Add the minced garlic and sauté for an additional 1-2 minutes, stirring frequently to prevent burning.
  11. If using, add red pepper flakes and stir to combine.
  12. Add the blanched green beans to the skillet and stir well to combine.
  13. Season with salt and black pepper, stirring to ensure even coating.
  14. Cook the green beans for 5-7 minutes, stirring occasionally to absorb flavors.
  15. Drizzle balsamic vinegar over the mixture, stir well, and cook for an additional 1-2 minutes to reduce slightly.
  16. Remove the skillet from heat once the green beans reach your desired tenderness.
  17. Return the crispy bacon to the skillet and stir to combine.
  18. If desired, sprinkle slivered almonds on top for added crunch.
  19. Transfer to a serving dish and garnish with additional black pepper or balsamic vinegar if desired.
