  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups mashed potatoes (prepared, homemade or store-bought)
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into 4 equal patties, about 1/2 inch thick.
  3. In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the patties and cook for 4-5 minutes on each side until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, reduce heat to low and add the beef broth and cream of mushroom soup. Stir to combine, scraping up any browned bits from the skillet.
  5. Add the frozen mixed vegetables and let simmer for about 5 minutes.
  6. Preheat your oven to 350°F (175°C) and grab a 9×13 inch baking dish.
  7. Spread the sauce and vegetable mixture evenly across the bottom of the baking dish.
  8. Place the cooked hamburger patties on top of the sauce mixture.
  9. Spread the prepared mashed potatoes over the patties, covering them completely.
  10. Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.
  11. Cover the baking dish with aluminum foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  13. Let the bake sit for about 5 minutes before serving.
  14. Scoop out portions and serve with some sauce and vegetables.
  15. Garnish with freshly chopped parsley.
