Instructions

- Stir in the chopped bacon and cook for another minute.
- Place the seared chicken breasts in a baking dish, ensuring they are not overlapping.
- Distribute the mushroom and bacon mixture evenly over the chicken.
- Drizzle honey mustard dressing over the chicken and toppings.
- Sprinkle shredded Monterey Jack and cheddar cheese over the chicken.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Ensure the internal temperature of the chicken reaches 165°F (74°C). If not, return to the oven for a few more minutes.
- Let the chicken rest for 5 minutes, then garnish with freshly chopped parsley.
