Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup of sliced mushrooms
  • 1 cup of cooked bacon, chopped
  • 1 cup of shredded Monterey Jack cheese
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of honey mustard dressing
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
  3. In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper. Sprinkle this seasoning over both sides of the chicken breasts.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove from skillet.
  5. In the same skillet, sauté sliced mushrooms for 3-4 minutes until tender.
  6. Stir in the chopped bacon and cook for another minute.
  7. Place the seared chicken breasts in a baking dish, ensuring they are not overlapping.
  8. Distribute the mushroom and bacon mixture evenly over the chicken.
  9. Drizzle honey mustard dressing over the chicken and toppings.
  10. Sprinkle shredded Monterey Jack and cheddar cheese over the chicken.
  11. Cover the baking dish with aluminum foil and bake for 25 minutes.
  12. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  13. Ensure the internal temperature of the chicken reaches 165°F (74°C). If not, return to the oven for a few more minutes.
  14. Let the chicken rest for 5 minutes, then garnish with freshly chopped parsley.
  15. Serve with steamed vegetables or a fresh salad.
  16. Dig in and savor the delightful flavors!

Notes

  • For added flavor, consider marinating the chicken in the honey mustard dressing for a few hours before cooking.
  • Feel free to substitute the cheeses with your favorites or what you have on hand.
  • This dish pairs well with a variety of sides, including rice, potatoes, or a simple green salad.
