- 2 large russet potatoes, scrubbed and cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1/4 teaspoon cayenne pepper (optional, for a little heat)
- Salt and freshly ground black pepper to taste

Instructions
- Wash and Prep the Potatoes: Scrub potatoes under cold water. Pat dry. Cut each potato lengthwise into 6-8 wedges.
- Soaking (Optional): Soak wedges in cold water for 30 minutes to 2 hours. Drain, rinse, and pat completely dry.
- Seasoning: In a large bowl, combine potato wedges with olive oil, garlic powder, onion powder, smoked paprika, dried oregano, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
- Preheat Air Fryer: Preheat air fryer to 400°F (200°C).
- Air Fry: Place wedges in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy. Cook in batches if needed to avoid overcrowding.
- Check for Doneness: Insert a fork or toothpick into the thickest part of a wedge. It should slide in easily.
- Serve: Transfer to a serving plate. Sprinkle with parsley and Parmesan cheese (if desired). Serve immediately with your favorite dipping sauces.
- Storage: Store leftover wedges in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer, oven, or microwave.
